Four Bean Goulash
My mother-in-law sent me this recipe some time ago.
For some reason I completely forgot about it.
Then, a few weeks ago, this recipe resurfaced as I was searching for her corn casserole recipe.
I am so glad I rediscovered it. My kids really liked it and I think you will like it too.
Very easy recipe! Don’t freak out over the ingredient list. It looks long, but it really is common and inexpensive items you will likely have on hand.
Ingredients:
- 1 lb hamburger meat
- 1 small onion, chopped
- 1 clove garlic (or a spoonful of the jarred stuff)
- dash of olive oil
- 1 pk taco seasoning
- 1 pk dry Ranch dressing mix
- 1 can pinto beans
- 1 can garbanzo beans
- 1 can black beans
- 1 can red kidney beans
- 1 can Rotel
- 1 can regular diced tomatoes
- 1 cup frozen corn
- 1 cup uncooked macaroni (You could use up to 1 1/2 cups)
- 1 cup water
Use a large cooking pot. Add a bit of olive oil and brown your hamburger meat with the chopped onion and garlic.
Once the meat is brown, add the Ranch and taco seasoning packets.
Stir well.
Add a can of each of the beans.
I did not drain any of them.
I also add the corn at this point. Just toss it in there.
Add both cans of tomatoes, undrained.
Toss in the macaroni.
Add one cup of water.
Stir to mix everything up really well.
Bring the mixture to a boil for about 7 minutes.
Reduce to simmer for 20-30 minutes.
When the liquids evaporate, you’re just about done.
Add a cup of cheese.
Mix well.
Now you’re ready to serve.
Plate it up (we served it in bowls).
I topped them with a dollop of sour cream and a bit of cheese.

I made this earlier today for a friend who’s grandson has been in a children’s hospital since birth the beginning of June. They are running back and forth to the hospital and work and the mom is there all day. So I made this to step 9 just to the boil and put it in a crock pot and set it on low for 2 hours. She took it to the hospital with the rest of the ingredients and some French Bread and a salad. (her daughter is in a Ronald McDonald house) but they all had this for dinner tonight and she mixed the cheese in and said she left it go for about an hour on low when she got there and said that it was so good. They ate the whole thing. So now I need to make some for my home but follow your recipe to the endm it looks yummy. But it smelled so good,
