I really, really want a super simple menu this week. I am taking advantage of leftovers and their ability to stretch meals!

Crockpot Chicken Fried Rice- this will make a lot and will result in a fair amount of leftovers. That makes me very happy.

Sour Cream Noodle Bake- this is a Pioneer Woman recipe and it makes a lot! Leftovers baby! (Yummy beefy recipe!)

Grilled Asian Salmon- served with steamed rice and grilled asparagus. (This is a carry over from last week.)

Pancakes- so easy!

Leftovers- lots of them!
