Spring break is upon us. We are itching for it next week. We’re planning a quick getaway to see Grandma and Grandpa in San Antonio.What are you guys planning?

In the meantime, here is what we’re eating this week.

Italian Crockpot Chicken– super easy dinner. Served over noodles, with a dinner salad and bread.

Baked BBQ Salmon– served with couscous and a green veggie.

Homemade Pizza– everyone will be happy.

Dijon Steak Kabobs– served with homemade mushroom wild rice and fresh fruit.

Leftover Buffet use ’em up

What is for dinner at your house? Looking for easy recipes with short ingredient lists. I have lots of them here on my site with step-by-step directions.

    I really want to try your baked BBQ salmon, but I am afraid. I never cook any fish except for fried catfish. And I have never tried couscous. Where have I been huh? I really, really want a good pan fried tilapia recipe. If I try to make your BBQ salmon, will you find me a great tilapia recipe? I specifically want to make fish tacos with shredded cabbage. Yum!

    1. Kim, I make salmon much more often then I make Tilapia, but I have made this recipe and it is delicious and I bet it would go nicely in tacos. It is not battered, but I think it would work. The Old Bay Spice and lime go together so well.

      I will keep my eye out for an easy fried Tilapia recipe that could easily convert to taco filling. 🙂

    We were planning on coming to San Antonio to visit our Grandma and Grandpa, but those plans got changed, so we are staying up here in Alaska, where we got 9 inches of snow today, and we are expecting 12 inches of snow by tomorrow at this time. Our spring break is going to involve lots of sledding, hot chocolate, and snow day recipes. Enjoy the sun and warmth of San Antonio.

      We love going there, but hate the drive. I must say, while my kids and I complain about the 6 hour drive from Dallas, but you’ve defiantly got one on me… how many miles is it from Alaska?

        Crystal, it’s 4042 miles from my home in Fairbanks (which is in the center of the state of Alaska) to San Antonio. My in-laws live in Kerrville, which is acutally another 60 miles west of San Antonio on I-10. I have a sister that lives in Killeen, and another sister that lives in Alvarado, a tiny town about 20 miles south of Ft. Worth. My husband used to drive big trucks for Builders Transport, based out of thier Dallas yard, and I used to have to drive from Kerrville to Dallas about twice a month with my ten year old and a newborn. It’s a long drive all right! Now I live in a tiny city in Alaska, and the nearest city to me is Anchorage, which is 485 miles away by car, through a snowy mountain pass (that drives right past Mt McKinley). I miss the hustle and bustle of DFW, even the traffic.

          My sister lives in Alvarado.
          I grew up in Joshua. (Well, the mid-cities area until 5th grade and then Joshua. Moved back to the mid-cities are once I was an adult.)
          Two of my brothers are in Burleson.
          I know right where Kerrville is.
          What a small world!
