Italian Crockpot Chicken

I’ve said it before, but I will say it again. There is something very tenderized about chicken that has slowly cooked over a tomato marinade like spaghetti sauce, for example.

This recipe is a staple in our house. It is quick and easy to prepare as well as delicious.

Ingredients:

  • 4-6 good size chicken breasts (or your favorite chicken parts)
  • 2 jars of your favorite spaghetti sauce
  • your favorite pasta (we like egg noodles for this)
  • 1/4 cup shredded Parmesan or mozzarella cheese

 

Drop your chicken breasts in the crockpot.

As you can see, mine were frozen- which totally rocks.

Pour the spaghetti sauce over the chicken breasts.

I use two jars because I use the sauce over our pasta as well once it is done cooking. If you are opting out of the pasta or do not want sauce on your pasta, one jar of sauce is sufficient.

With two jars the chicken is completely covered.

Put the lid on the crockpot and cook on high for 4-6 hours or low for 8-10.

Once the chicken is done, it will be steamy. (See the steam?)

Oh, it is amazing!

Meanwhile, the last 20 minutes or so of chicken cook time, prepare your noodles according to the package directions.

Once the noodles are done, serve the chicken over top the noddles.

Scoop a couple spoonfuls of spaghetti sauce over the chicken.

Top with shredded Parmesan or mozzarella cheese.

Easy breezy.

  8. Enjoy!
Notes

i love this, and do it a lot–last night, in fact!

to “up the ante” but not the work (ha!) I also add in:

1 small bag frozen mixed bell peppers and onions
1 can black olives (omit olives if your family doesn’t like them.)

but adding these really makes the dish seem complex and i always get compliments!
