Weekly Meal Plan 36

Meal planning is about to become a tad bit simplified for about 6-8 weeks at our house. At least in regard to dinner. Why you might ask…

Garrett and Anthony are both leaving for the rest of the summer (visiting a weekend here and here) to spend time with their other parents. Garrett will be at his dad’s (who lives here in the metroplex) and Anthony will be at his mom’s (who lives about 300 miles away).

This means dinner expectations are simplified- especially since Lenny works late with the a/c business… it does not take much to satisfy the tummy of four year olds, a fifteen month old and myself.

So here is to simple dinners!

Mexican Beans and Rice– simple, one skillet meal!

Homemade Gourmet Crockpot Fajitas– served with Puerto Rican rice.

Black bean, corn and beef quesadillas– mix together one can of black beans drained, a can of Rotel tomatoes un-drained and a small bag of frozen corn. Use this mixture with leftover fajita meat and leftover rice as well as some shredded cheese to put inside flour tortillas and grill them on the stove.

Grilled cheese and chicken noddle soup– doesn’t get much easier than that!

Leftover Buffet– use ’em up!

Homemade Mac and Cheese– (I will be watching my cousins two little girls a few days this week. So this will make for a plentiful lunch for five children who are 4 years old and younger!)
(All of the below are from the freezer section at the grocery store and make providing hot lunches a breeze- just bake them in the oven.)

Fish sticks


Corn dogs

Chicken nuggets
Meatballs
For sides we have lots of fresh fruit- strawberries, apples, grapes, bananas and watermelon. We also have tator tots, sweet potato fries and yogurt tubes.

Cold cereal and fruit  (2 mornings)
Cinnamon rolls 
Pancakes
Cinnamon toast and fruit 

Popcorn on the stove
Wheat Thins and cream cheese
Cereal bars
Homemade cookies
Goldfish crackers
