Weekly Meal Plan 29

Here is what I am feeding my family of seven this week. I include my dinner plans, as well as breakfast, packed lunches for two school age children, lunch at home for three little children and after school snacks for our Monday-Friday week.

We had a crazy busy week last week. When that happens sometimes we have carry over meals from our meal plan because we pop in for dinner at a local deli we love. The first two meals are from last weeks meal plan and will be made this week instead.
Crockpot Chicken Enchilada Casserole– so yummy! I will make a side of rice  as well.  

Crockpot Chicken with Couscous– Tiffany, over at Eat at Home, has some of the best recipes that are quick, easy with short ingredient lists. She uses a whole fryer for this, but I am going to use frozen chicken breasts because I have a million on hand.

Asian Salmon on the Grill– I love eating salmon and dirty rice at Pappadeaux…. so this puts me in the mood for dirty rice. I found this dirty rice recipe online so I will try it.

Garlic Chicken Pizza– another great recipe over at Eat at Home. Love her stuff! I’ve been waiting a while to make this… it is finally on my meal plan!

Leftover Buffet– use ’em up!

Big boys packed lunches are:

Peanut Butter and Nutella
chips
bottled water (with flavor packet to add)
Yogurt Tubes (I freeze them and they are nice, cold, ice cream-like treats!) or apple

*And from time to time mornings are busy and crazy or we run out of bread and lunches do not get packed. In these situations, they eat a hot lunch at school.

Lunch for those of us at home:

Mac and Cheese
Pioneer Woman’s Olive Cheese Bread- so good! The recipe is in her cookbook.
French bread pizzas with red sauce and pepperonis
Leftovers
We have yogurt, a fruit tray, apple sauce and string cheese for sides.

Blueberry Waffles with Peanut Butter or Nutella (these were a huge hit a few weeks ago!)
Blueberry Pancakes
Cinnamon Toast in the oven (use spray butter- it makes it so much easier!)
Breakfast Pizza- english muffins with scrabbled eggs, bacon bit and cheese- melt in the oven and say yum!
Bagels and cream cheese

After school time is a hungry time at our house…

Homemade Gourmet Taco Dip and chips
Baked Pizza Bites
Fruit and frozen yogurt tubes
Cinnamon Rice Cakes with peanut butter or Nutella
Anything they can find in the fridge that will not eat them first….

    The dirty rice looks good. I'll have to try a variation of that because I"m not sure I could do the ground meat mixture with the chicken livers/gizzards. It's probably good and I just need to put mind over matter 😉
    I'm so impressed that you plan breakfasts, snacks and lunches too!

    I need new chicken ideas!

  4. Debbi- the enchillada casserole is super good! And a great way to hide some veggies. We love it and I have very picky kids.

    Tiffany- I am NOT going to do the gizzards/liver mixture in the rice. I was thinking about hamburger meat or just leaving it out.

    Alison- We are the chicken family. I love to buy the frozen breasts and always have them on hand. Make life so easy.
