It is chicken week here at Crystal & Co…. for dinner anyway.

Here is what I am feeding my family this week at Crystal & Co.



Breakfast choices:

Maple and Brown Sugar Oatmeal. Simple. Buy it premade in the little packets (they are microwaveable and easy for a school morning) or make plain oatmeal on the stove (I like to make it with milk) and add a few splashes of maple flavoring (you can buy it over by the vanilla extract) and a few handfuls of brown sugar and it is delish! I also like to add some chopped pecans, walnuts and almonds to mine. Yum! I have enough for oatmeal breakfasts twice this week.

Pioneer Woman Breakfast Burritos– these are amazing. You make a bunch, wrap them in foil and store them in the fridge. Then, you can just warm them up as you go. (Take them out of the foil of course.) You make the Breakfast Potatoes to go with them. These burritos will last us two days for breakfast.

Nutella and Toast- totally the default breakfast!



Lunches:

Garrett and Anthony pack a lunch and it is the same ol‘ same ol‘:

Nutella and Peanut Butter sandwiches

BBQ chips or pretzels

Bottled water with peach tea water flavoring packets- handy for school lunch!

Apple

Lunch for the twins and me:

Mac and cheese

Hot Dogs and tator tot baked in the oven

Pepperoni slices (my twins love them) with string cheese and pretzels

Bean and cheese nachos baked in the oven

Homemade cheese and pepperoni pizza (never got to make this last week)

**I will also make a big salad and store it in the fridge for lunch for myself on days I am not interested in mac and cheese, for example. I like to top it with turkey lunch meat from the deli.

Afternoon snack:

Taco dip and tortilla chips – we TOTALLY LOVE THIS STUFF!

pretzels and string cheese

Baked tator tots with melted cheddar cheese on top- kids love it!

Pizza bites (big kids really love these and they are starving after school)

Chips and salsa

Cheez-It crackers and fruit



Dinners:

Pioneer Woman’s Chicken Spaghetti– yum! Check out the recipe. Baked french bread with butter and garlic salt on top. (I will cook the whole chicken in the crockpot all day long, then debone and carry on with the recipe as instructed.)

Black Bean and Chicken Quesadillas– Never made this last week… not a problem. It is a stand by recipe. As long as there is leftover chicken from one of these recipes this week, Black Bean and Chicken Quesadillas will happen. And since it is chicken week, what do you think?

Here is how you make it. Take a can of black beans (undrained), can of corn (drained), can of rotel (drained), a can of slices olives (drained) and mix well. Slice up leftover chicken. In a flour tortilla, fill with bean mixture, sliced chicken and cheese. Fold in half and cook on both side on low heat griddle. Kids love it! So easy! Great way to use leftover chicken as well.

Crockpot Honey Mustard Lime Drumsticks. Super simple! The definition of simple! I double the recipe. (Should have leftover chicken I can debone and toss into the quesadillas.) Served with steamed rice and steamed buttered broccoli.

Homemade Gourmet Italian Crockpot Chicken– in my freezer preassembled in a ziplock bag. Just thaw and toss it in the crockpot! Served over buttered egg noodles and top off with mozzarella cheese. Green beans on the side. Don’t like Homemade Gourmet, or have access to a consultant, etc? No problem- improvise. Instead of using their spaghetti seasoning, just buy a packet of spaghetti seasoning over on the packet aisle at the grocery store. Or, find a Homemade Gourmet consultant. I love their stuff and it makes meal time so easy!

Leftover Buffet– use them up!



Some awesome desserts you should try this week. Easy ingredient lists for both:

Mardi Gras King Cake– using canned cinnamon rolls.

    I love your recipes. How do you get all 5 to eat? Mine are food primadonnas who go hungry. I love the breakfast burrito – I'm going to try that:)

    Anna- thanks for the recipe. Heading over to check it out. Bean soup… I love beans! And so do most of my kiddos! And anything crockpot- I am sold!

    Bluecottonmemory- how do I get all 5 to eat… they don't always. And rarely do they all clean their plates. The big kids (who are 10 ans 8) I can just tell them they have to at least try everything (usually it is the veggie we struggle with). I try hard to get them to eat all of their meat. Even if you tried mixed veggies last week and hated them, eat at least one bite this week and try them again. For the twins, who are 4, there are days I have to stand next to them and feed them bite by bite to get them to eat. And if that is what I have to do… then so be it. I am not about eating everything on your plate, but eating a balanced amount. One of my twins could live off carbs- he goes for the pasta or rice first and then he is done. But sometimes I have to stand next to him and feed him the meat one bite at a time. And again, he does not have to eat everything. Don't get me wrong… dinner time wears me out alot of times!And, if the big kids have neg comments about dinner before they even take a bite, the little kids start saying the neg things as well before even trying it. I try very hard to avoid that as much as possible. The big kids are learning that they hold a great impression on their little brothers.

    Kelly- I really am enjoying your blog. I have been doing this for 2 years, but just in the last 6 months or so as more than a hobby. Thank you for all the helpful information you share!

    I am a crockpock fanatic!! Share with me too! We should do a Crockpot Meme… i have these random ideas but i don't think i could ever commit to a weekly Meme, LOL
